I just mixed what was left in the cupboards feeling creative and made some yummy fritters that were so easy and healthy I had to share.
Makes 5 fritters - serves 2
2 whole eggs
Half a tin of corn in spring water
1 large zucchini grated
1 large avocado.
In a bowl mix 2 eggs, grated zucchini and half a tin of corn.
I use coconut spray to lightly spray a non stick pan on medium heat.
With a spoon pour into the pan on four portions. Mix should make 5 max.
Fry till golden brown and flip.
Serves with slices on avocado on top.
